How long will this cheese store?
NOTE: Kraft Australia is moving production of their canned cheese from Australia to the Middle East (boy, will they regret that!). We don't know when, or if, it will be available to us any more. We've had to switch to Bega Brand (same as Red Feather Brand) canned cheese. Everything written below still applies to Bega/Red Feather. The only difference is that it doesn't melt as well as the Kraft cheese did.
NOTE: Someone, or some thing, is interfering with our Shopping Cart. It's being slowed to a point where it's almost unusable. One product that has always been missing from food storage has been real CHEESE. It's true that, if you have a wine cellar, you can buy a waxed reel (or is it wheel?) of cheese and store it (= age it) for years. That's a bit expensive and unwieldy, but if you are wealthy enough to own a wine cellar, you probably can afford a 25 lb reel/wheel of cheese . . . and won't mind throwing about half of it away as it molds after you cut it open. For those of us of more modest means, we now have real Cheddar Cheese. In a can. Its technical name is "Processed Cheese." (Please see note toward the bottom of this page.) It's that name you have to give it because it wasn't "naturally" produced by a Wisconsin cheesemaster. It's a legal thing. From the ingredients and from the TASTE, you'll believe it's honest-to-God real, Wisconsin-made cheese! It's just plain delicious.

I don't care for sharp cheddar cheese, at least not real sharp cheddar. Makes my tongue curl. Having been a kiddo in the '50s, I actually like Velveeta.® I'm a real fan of American cheese, though my favorite—discovered on an airliner served with lunch—is pasteurized Gruyere cheese (product, of course). It's becoming harder and harder to find. But, I digress. (I'll pause here for a moment to give you time to use the smelling salts to revive that real cheese connoisseur

We've been as happy as it's possible to be with the powdered cheese products that we've offered for years. They make an excellent sauce and spread, but there's just something "not right" about spreading cheese on your sandwich like it was peanut butter. We knew we'd miss having the real thing.
Then we got an email about this Canned Cheese made in Australia and imported into the US. I asked Phyllis to see if she could get samples. She could. We did. They came in early this week (that was over 8 years ago).
I watched with interest as the case was opened. It contained 36 - 8 ounce tins of real canned cheese. The cans are ever-so-slightly larger in diameter than a 6 oz. can of tuna and about 25% taller. I was expecting a Velveeta®-type product that would have to be spooned out of the can. (Even that still held my interest!)
With a flash of genius that could only come from a former restaurant manager (which she is), Phyllis opened both ends of the can and pushed out a 3 1/4" x 1 3/4" mini-wheel of cheese. It didn't sag. It didn't quiver. It didn't run. It was solid cheese. She cut a slice and handed it to me. All eyes were on me as I tried to look like an official cheese-taster using that stony-faced look. "Well??" Phyllis and Justin asked. "It's good. It's very good!"
I told them as they cut their own slices. "It's excellent!"
This canned cheese will store for years. No one is sure for exactly how many. They've never tested it just for longevity. It's packaged this way in Australia for folks who don't have refrigeration, like most in third world countries. The manufacturer is confident it will last "indefinitely". Since it's in a sterile environment,
air can't circulate so germs can't get to it, there's no reason that it can't store indefinitely. Just keep it as cool as you can (protect from freezing). Once
it's opened, it's best to refrigerate any leftovers (which a family of 4 or more probably won't have!), though it would go another day in a zipper-locking baggie. (Just try keeping from polishing off the leftovers! I dare you!)
This is real cheese that can be grated (Phyllis tried that immediately.). It can be sliced into thin slices for sandwiches, pizzas, lasagna or meat loaf. But there is some disagreement as to the flavor.

I think it tastes like mild cheddar. Phyllis thinks it's slightly sharp. If it's at all sharp, it's so mild that it should be considered mild cheddar. I think it's very close to being American. Phyllis says, "No way. It's cheddar!" Ultimately, you'll have to decide. Taste is a personal thing. Maybe it's because I'm looking for a more American cheese taste. Regardless,
it tastes and does all you want a cheese to taste like and do. I think you'll love it, too. It's EXACTLY what we've been needing to add to the food storage line to satisfy the American palette. Try it! I think you'll like it.
